Authentic because it selects only the best seeds, certified by the ENSE (Ente Nazionale Sementi Elette), to whose purity it has dedicated 100 hectares of land, despite the fact that the ripening times are the longest ever – the vegetative cycle lasts about 165 days – and the production risks are high. A conscious choice of respect for the raw material, identity of a territory need original aromas.

The origin is as old as the legend widespread in China: it is said of a good genius who, moved to pity by the hunger and misery to which the farmers of the area were forced, pulled out his teeth and threw them into a swamp: there the seedlings germinated whose fruit resembled white teeth. The grain rice it was already abundant in ancient Rome, sprinkled in generous handfuls on the heads of the spouses as a symbol of fertility and prosperity. Just as it abounds, but with less waste, in the Reserve of San Massimo nel Pavese, where is the Ticino river and the characteristic resurgences allow generous digressions on the surrounding peat lands giving rise to springs, oxbow lakes, ponds and springs, ideal places for its growth, further nourished by the organic substances of 400 hectares of forest.

Verrine of rice cream with peaches and chocolate

A sumptuous dessert for a special occasion that will amaze you with its taste and beauty. Delicious but at the same time light, ideal for snacks with friends or to conclude a meal.

Ingredients for people 4

  • Carnaroli rice (San Massimo Reserve) 100 gr
  • Whole milk 500 ml
  • Granulated sugar 50 gr
  • The grated zest of ½ orange
  • 2 generous tablespoons of peach jam (Mariangela Prunotto)
  • Dark chocolate with orange 50 gr (Bonaiuto)
  • Fresh cream 80 ml
  • A handful of Nocciolini di Chivasso (Bonfante)
  • Tamìa organic extra virgin olive oil

Preparation

  1. Bring the milk to the boil with the sugar and orange zest.
  2. Pour the rice and cook over low heat until it is well cooked and creamy.
  3. Add the jam to the rice cream and mix.
  4. Cover with cling film and leave to cool at room temperature.
  5. Meanwhile, prepare the chocolate ganache by melting the chocolate in the cream until it is creamy. Let cool.
  6. Assemble the verrines: Fill with the rice cream (if it has set, add some milk to make it creamy again), pour the ganache on top and finish with the crumbled Chivasso peanuts. Serve.
