VINIFICATION INIFICATION: slow soft pressing, immediate lowering of the temperature and subsequent fermentation at low temperatures, standing on the noble lees (batonnage) for 3 months; refermentation and refinement in autoclave for 9 months on the lees
COLOR: bright, very pale straw yellow
BOUQUET: fresh, elegant, with fruity notes that alternate with spice fragrances
TASTE: clear, rather dry and savory, with a subtle but decisive and persistent perlage
