Description

FUN FACT: the Merlot grapes are harvested in mid-September, in order to have a balanced acidity and an abundant content of grape sugar. It is a fresh sparkling wine full of personality. Excellence reaches it when it is tasted on the beach, at sunset, in company, combined with the color of the sea.

Production area: soil of alluvial origin, clayey and moderately calcareous, western area of ​​the Grave, in the municipalities of Porcia and Pasiano.

Variety: 100% Merlot.

Vineyards: Guyot training system, 4000 plants per hectare, yield 80 ql / Ha.

Harvest period: II / III week of September.

Vinification and ageing: Destemming and brief stop in steel vats in contact with the skins. After racking and decantation, strictly controlled primary fermentation begins. The wine is then decanted to separate the yeasts and rests in steel containers waiting for the second fermentation.

Sparkling wine: refermentation of the base wine in an autoclave, where it ferments for about 20 days, with the help of selected yeasts, at a constant temperature between 16 ° - 18 ° C. Once the desired overpressure has been reached, the mass is cooled (- 4 ° C) to stop fermentation and favor stabilization. Subsequently the wine is kept at a controlled temperature of 8-10 ° C for at least three months, in order to favor natural aging in contact with the yeasts. At the end of this phase, filtration and isobaric bottling is carried out.

Alcohol content: 11,5% vol.

Aging potential: to drink immediately or keep for 2-3 years.

Perlage: fine and persistent which ensures cleanliness of the palate.

Color: soft pink, silky and luminous.

Perfume: elegant, complex, fresh and fruity, with light notes of pomegranate and rosehip petals, accompanied by a delicate aroma of fresh fruit, citrus and licis.

Taste: slender, full of personality but gentle, reminiscent of cherry.

Match with: Ideal as an aperitif. Excellent with raw ham, fried seafood, white fish carpaccio, fried artichokes.
