Preparation

I put the pasta in a pot with boiling water and a pinch of salt.

For the cacio e pepe sauce: put the pecorino cheese in a bowl and add the pepper, grate the orange peel being careful not to use the white part of the citrus peel, add a little cooking water from the pasta to create a thick cream, I grind a little more pepper. Drain the pasta and add it to the cacio e pepe sauce. If needed, add a little more of the pasta cooking water. I serve using a pastry ring and finish with a grind of pepper.
