CULTIVATION: Organic Agriculture - herbicides, mechanically grassing, fertilization with manure produced on the farm, exclusive use of protective cover products (copper and sulfur)
USUAL RIPENING TIME: early September
HARVEST METHOD: by hand, in small ventilated crates of about 20 kg, early in the morning when the temperature of the grapes is low
VINIFICATION: slow soft pressing, immediate lowering of the temperature and subsequent fermentation at low temperatures
aging on the noble lees (batonnage) for 3 months;
AGING: at least 42 months on the lees
COLOR: bright, light straw yellow
BOUQUET: elegant, intense, with aromas of ripe fruit that blend with notes of bread crust and pastry
TASTE: full, decidedly savory and dry, with a fine perlage and a long finish
ALCOHOL CONTENT: 12% vol.
