Grapevine: White berried grapes suitable for sparkling winemaking, in particular Trebbiano and Garganega

Production area: Grapes coming in particular from the Veneto and Emilia regions

Plots: Well exposed soils on a limestone base, which give the grapes a sustained natural acidity ideal for the production of sparkling wines.

Collection: Depending on the vintage, the harvest takes place between the end of August and the beginning of September to ensure correct ripening and a good level of acidity of the grapes

winemaking: Soft pressing and fermentation in steel containers at a controlled temperature to maintain the natural aromas of the grapes and obtain a base wine rich in acidity and aromas. The second fermentation
(second fermentation) takes place through the inoculation of selected yeasts in steel tanks at controlled temperature and pressure (autoclaves) according to the Charmat method.

Color: Brilliant straw yellow. Fine and persistent perlage.

Smell: Fragrant and harmonious on the nose, with pleasant fruity notes of apple, floral hints of white flowers

Taste: Full and fresh flavor, slightly acidic and fruity. In the mouth it is dry with a pleasant final note of almond.

pairings: A very versatile wine: perfect to sip as an aperitif, the dry and full taste lends itself well to any meal, except for dessert only. It is particularly suitable to accompany appetizers, risottos, white meats, shellfish and raw or fried fish. Also try with fresh, soft or medium-aged cheeses.
