Description
In ours orchards of Alba we collect the apricots that are processed at the right point of ripeness after a few hours, and cooked with the addition of cane sugar to obtain a completely natural jam in compliance with the Piedmontese tradition.
The processing method a "Open sky" it is the classic method used since ancient times for the preservation of fruit. In fact, after being carefully cleaned and washed, the fruit is simply cooked in a pot with the sole addition of cane sugar.
In this way we obtain a product that enhances the flavor of the fruit used and with the artisan characteristics that only our mothers can match.
All this is proven by the quantity of fruit used; for the production of 100 grams of jam are used 130 grams of juicy fresh apricots.
It is excellent when paired with freshly toasted bread, "whitened" with mountain butter.
